Dive into the bold flavors of Nut-Free Sev Bhaji, a delightful twist on the traditional Indian curry that’s perfect for those with nut allergies! This rich and aromatic dish features crispy chickpea flour noodles (sev) immersed in a spiced tomato-based gravy, brimming with layers of cumin, green chilies, and garam masala. Made without nuts, it remains deeply satisfying with its tangy and savory profile, intensified by fresh coriander and a splash of lemon juice. Ready in just 40 minutes, this simple yet flavorful recipe is ideal for a quick weekday meal or an impressive addition to your vegetarian menu. Serve it with steamed rice or soft Indian bread for a wholesome experience everyone can enjoy.
Heat the oil in a large pan over medium heat.
Add the cumin seeds and allow them to sizzle for about 30 seconds until aromatic.
Add the chopped onion and green chilies and sauté until the onions turn golden brown, about 5 minutes.
Stir in the ginger-garlic paste and cook for another minute until the raw smell disappears.
Pour in the pureed tomatoes and mix well.
Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Cook the mixture for 5 minutes until the oil starts separating from the masala.
Pour water into the pan and bring the mixture to a simmer. Allow it to cook for 5-7 minutes to thicken slightly.
Just before serving, reduce the heat to low and add the sev to the simmering gravy, making sure it is well-coated with sauce. Cook for 1-2 minutes. Do not overcook as the sev may become too soggy.
Garnish the sev bhaji with fresh coriander leaves, garam masala, and a squeeze of lemon juice.
Serve hot with steamed rice or Indian bread of your choice.
