Preheat your oven to 350°F (180°C). Line a 9x9-inch square baking dish with parchment paper, leaving some overhang on the sides for easy removal.
In a large mixing bowl, combine the rolled oats, pumpkin seeds, sunflower seeds, dried cranberries, chopped dates, and shredded coconut. Stir well to mix evenly.
In a small saucepan over medium heat, combine the honey, unsalted butter, and brown sugar. Stir frequently until the butter has melted and the sugar has dissolved into the honey. Remove from heat.
Stir in the vanilla extract, cinnamon, and salt into the honey mixture, mixing well.
Pour the wet ingredients over the dry ingredients in the large mixing bowl. Mix thoroughly to ensure all the dry ingredients are coated with the honey mixture.
