Cut 500 grams of grass jelly into 2 cm cubes and set aside.
In a small saucepan, combine 200 grams of palm sugar and 250 ml of water. Add one whole pandan leaf, tied into a knot, to the saucepan for flavor.
Heat the mixture over medium heat, stirring occasionally until the palm sugar has completely dissolved. This should take about 5 minutes. Once dissolved, remove the pandan leaf and allow the syrup to cool.
In a separate small saucepan, gently heat 400 ml of coconut milk with a pinch of salt over low heat, stirring occasionally. Do not allow it to boil. Once warmed, remove from heat and let it cool.
