Prepare the vermicelli rice noodles according to the package instructions. Once cooked, drain and rinse them under cold water to stop the cooking process. Set aside.
In a medium bowl, mix together the soy sauce, rice vinegar, honey, lime juice, minced garlic, and grated ginger. This will be your dipping sauce.
