In a mixing bowl, combine flour, instant yeast, sugar, and salt.
Warm milk in a saucepan until it's lukewarm. Remove from heat and melt butter in it.
Add the melted butter and milk mixture to the flour mixture and mix. Add the egg and combine until a dough forms.
Knead the dough for about 10 minutes until smooth and elastic. Cover and let it rise for about 1 hour or until doubled in size.
While the dough is rising, prepare the filling. Heat vegetable oil in a pan over medium heat.
Finely chop onion, mince garlic, and grate ginger. Add to the pan and sautΓ© until golden.
Add ground beef to the pan and cook until browned.
Stir in curry powder, soy sauce, diced carrot, and potato. Cook until vegetables are just tender.
Mix in frozen peas and cook for another 2 minutes. Add chopped coriander leaves, then remove from heat and cool completely.
Preheat the oven to 180Β°C (350Β°F).
Once the dough has risen, punch it down and divide it into 12 equal pieces.
Flatten each piece of dough, place a spoonful of filling in the center, and seal carefully.
Place buns, seam side down, on a baking tray lined with parchment paper. Let them rise for 15 minutes.
Mix egg yolk with water and brush the tops of the buns.
Bake in the preheated oven for 15-20 minutes until golden brown.
Serve warm and enjoy your nut-free curry buns.
