Delightfully creamy and aromatic, Nut-Free Badam Milk is the perfect alternative for those with nut allergies, offering all the richness and flavor of traditional badam milk without the almonds. This unique recipe replaces nuts with sunflower seeds, blending them into a silky-smooth paste that's combined with whole milk, fragrant crushed cardamom, golden turmeric, and a touch of saffron for an irresistible burst of natural flavor. Sweetened lightly with sugar and finished with rose water, this beverage is both indulgent and refreshing, making it an ideal treat served warm on cozy evenings or chilled for a refreshing summer cooler. Easy to prepare in just 25 minutes, this nutritious and allergen-friendly twist ensures everyone can enjoy the timeless taste of badam milk.
Start by soaking the sunflower seeds in 240 ml of hot water for 30 minutes to soften them. If you are short on time, you can use cold water and soak overnight instead.
Once soaked, drain the water and transfer the sunflower seeds to a blender. Add 100 ml of fresh water to the blender.
Blend the seeds into a smooth paste. You may need to stop and scrape down the sides to ensure a fine, smooth consistency.
In a heavy-bottomed saucepan, pour the whole milk and place it over medium heat.
As the milk warms up, gently crush the cardamom pods with a mortar and pestle to release the seeds and the aroma.
Add the crushed cardamom (including the pods), saffron strands, sunflower seed paste, turmeric powder, and sugar to the milk.
Stir constantly to mix the ingredients and ensure the milk doesn't stick to the bottom of the saucepan.
Once the mixture reaches a gentle boil, reduce the heat to low and let it simmer for 10 minutes. Stir occasionally.
Add rose water to the milk, stir well, and let it simmer for another minute.
Remove from heat and let the fragrant nut-free Badam Milk cool slightly.
Strain the mixture using a fine sieve or cheesecloth to remove the cardamom pods and any larger seed pieces.
Serve warm or chilled, garnishing with a few extra saffron strands if desired.
