Season the sirloin steak generously with 1/2 tsp salt and 1/2 tsp black pepper. Let it rest at room temperature for 10-15 minutes.

Bring a pot of salted water to a boil. Add the potatoes and cook for 10-12 minutes, or until tender. Remove and set aside to cool slightly, then cut into halves or quarters.
