  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 28 ounces canned diced tomatoes
  • 15 ounces tomato sauce

  • 15 ounces black beans, drained and rinsed
  • 1 cup beef broth
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper (optional, for heat)
  • 2 tablespoons olive oil

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add olive oil and let it warm up for a minute.

Add the diced onion to the pot and sauté for 3-4 minutes until softened and translucent.

Step 3

Stir in the minced garlic, red bell pepper, and green bell pepper. Cook for another 2-3 minutes.

Step 4

Add the ground beef to the pot. Break it up with a wooden spoon and cook until browned, about 8-10 minutes. Drain any excess fat if necessary.

Stir in the chili powder, ground cumin, paprika, oregano, sugar, salt, black pepper, and optional cayenne. Cook for 1-2 minutes to toast the spices.

Step 6

Pour in the canned diced tomatoes, tomato sauce, and beef broth. Stir well to combine.

Step 7

Add the kidney beans and black beans. Stir again and bring the mixture to a gentle boil.

Step 8

Once boiling, reduce the heat to low and let the chili simmer uncovered for 45 minutes, stirring occasionally.

Taste and adjust seasonings as needed. Add more salt or spices if desired.

Step 10

Serve hot with your favorite toppings such as shredded cheese, sour cream, diced green onions, or tortilla chips.
