Slice the chicken breast or pork tenderloin into thin strips about 2 inches long. In a small bowl, mix 2 tablespoons of soy sauce, the dry sherry or rice wine, and cornstarch. Add the meat to this marinade, toss to coat, and let it sit for 10 minutes.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs and scramble them until just set. Remove the eggs from the pan and set aside.

Add another tablespoon of vegetable oil to the skillet. Increase the heat to high and stir-fry the marinated meat until fully cooked, about 2-4 minutes. Remove the meat from the pan and set aside.

Return the cooked meat and scrambled eggs to the skillet. Add the green onions, hoisin sauce, remaining tablespoon of soy sauce, and sesame oil. Stir-fry everything together until well mixed and heated through.
