📝 Instructions

13 steps
1

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper for easy removal.

2

In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

3

Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until combined.

4

Slowly add the boiling water to the batter, mixing until the consistency is smooth (the batter will be thin).

5

Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

6

While the cakes bake, prepare the coconut filling by combining the shredded coconut and sweetened condensed milk in a medium bowl. Stir until well combined and set aside.

7

Once the cakes are baked, let them cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

8

When the cakes are cooled, spread the coconut filling evenly over the top of one cake layer.

9

Place the second cake layer on top of the coconut filling, pressing gently to secure.

10

To prepare the ganache, heat the heavy cream in a small saucepan over medium heat until it begins to simmer (do not let it boil).

11

Remove the cream from heat and pour it over the chocolate chips in a heatproof bowl. Let it sit for 2-3 minutes, then stir until smooth and glossy.

12

Pour the ganache over the top of the cake, allowing it to drip down the sides for a decorative finish.

13

Refrigerate the cake for at least 30 minutes to set the ganache before serving. Enjoy!
