Ingredients

  • 14 oz can (drained and quartered) artichoke hearts
  • 8 oz (sliced) button mushrooms
  • 2 tbsp olive oil
  • 3 cloves (minced) garlic
  • 1 tsp herbs de Provence (or Italian seasoning)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup (grated) parmesan cheese
  • 1 cup (shredded) mozzarella cheese
  • 0.5 cup breadcrumbs
  • 2 tbsp (melted) butter
  • 2 tbsp (chopped, for garnish) fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a medium-sized baking dish with olive oil or cooking spray.

Step 2

Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.

Step 3

Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until the mushrooms are soft and have released their moisture.

Step 4

Add the quartered artichoke hearts to the skillet and season with herbs de Provence, salt, and black pepper. Stir well to combine and cook for an additional 2 minutes, then remove from heat.

Step 5

Transfer the mushroom and artichoke mixture into the prepared baking dish and spread it out evenly.

Step 6

In a small bowl, mix the grated parmesan cheese, shredded mozzarella cheese, breadcrumbs, and melted butter together until the mixture resembles coarse crumbs.

Step 7

Sprinkle the cheesy breadcrumb mixture evenly over the artichoke and mushroom base in the baking dish.

Step 8

Bake in the preheated oven for 20-25 minutes, until the topping is golden brown and bubbly.

Step 9

Remove from the oven and allow the dish to rest for 5 minutes. Garnish with freshly chopped parsley before serving.

Step 10

Serve warm as a main dish with crusty bread or as a side dish alongside roast chicken or pasta. Enjoy!
