Ingredients

  • 6 medium russet potatoes
  • 4 tablespoons unsalted butter
  • 1 cup whole milk
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup breadcrumbs
  • 0.25 cup parmesan cheese
  • 1 can nonstick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and cube the potatoes. Place them in a large pot, cover with water, and bring to a boil. Cook until the potatoes are fork-tender, about 15 minutes.

Step 3

Drain the potatoes and return them to the pot. Mash them until smooth or leave them slightly chunky for texture, depending on your preference.

Step 4

Stir in the butter, milk, and sour cream. Mix until creamy and well combined.

Step 5

Fold in the shredded cheddar cheese, eggs (lightly beaten), garlic powder, onion powder, salt, and black pepper. Mix until the ingredients are fully incorporated.

Step 6

Spray a 9x13-inch casserole dish with nonstick cooking spray. Spread the potato mixture evenly into the prepared dish.

Step 7

In a small bowl, mix the breadcrumbs and parmesan cheese together. Sprinkle the mixture evenly over the top of the casserole.

Step 8

Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the topping is golden brown.

Step 9

Let the casserole cool for 5 minutes before serving. Enjoy!
