Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.75 cups Unsalted butter
  • 1.25 cups Granulated sugar
  • 3 pieces Large eggs
  • 1.5 teaspoons Vanilla extract
  • 0.75 cups Whole milk
  • 2 cups Fresh or jarred cherries (pitted and halved)
  • 2 tablespoons Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy, about 3-4 minutes using an electric mixer.

Step 4

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients in three additions, alternating with the milk. Begin and end with the dry ingredients. Mix just until combined, being careful not to overmix.

Step 6

Gently fold in the cherries using a spatula, ensuring they are evenly distributed in the batter.

Step 7

Pour the batter into the prepared cake pan and smooth out the top with a spatula.

Step 8

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely.

Step 10

Once cooled, dust the top of the cake with powdered sugar, if desired. Slice and serve. Enjoy!
