Perfect for warm days or as a year-round indulgence, this recipe delivers a refreshing, homemade twist on a beloved classic. In a medium saucepan, combine the whole milk and fresh mint leaves. Heat over medium heat until the mixture is hot but not boiling. Remove from heat, cover, and let steep for 20 minutes to infuse the mint flavor.
Strain the mint milk through a fine-mesh sieve into a bowl to remove the leaves, gently pressing to extract all the flavored milk. Discard the mint leaves.
Return the mint-infused milk to the saucepan and add the heavy cream. Heat on medium until hot but not boiling.
In a separate bowl, whisk together the granulated sugar, salt, and egg yolks until pale and thick. Gradually whisk in the hot mint cream mixture.
Pour the egg and cream mixture back into the saucepan. Cook over medium-low heat, stirring constantly with a wooden spoon, until the custard thickens to coat the back of the spoon, about 8β10 minutes. Do not allow to boil.
Remove from heat and stir in the vanilla extract and peppermint extract.
Pour the custard through a sieve into a clean bowl to remove any cooked egg bits. Allow to cool to room temperature, then cover and chill thoroughly in the refrigerator, at least 4 hours or overnight.
Once chilled, pour the custard into an ice cream maker and churn according to the manufacturer's instructions.
During the last 5 minutes of churning, add the dark chocolate chips to evenly distribute them throughout the ice cream.
Transfer the ice cream to a lidded container and freeze until firm, about 2 hours.
Serve the mint chip ice cream in bowls or cones for a refreshing treat.
