Preheat your oven to 375°F (190°C).
Wash the zucchinis and cherry tomatoes thoroughly. Cut each zucchini in half lengthwise and hollow out the centers using a small spoon or melon baller to create mini boats. Set the scooped-out flesh aside.
Finely chop the scooped-out zucchini flesh and add it to a mixing bowl. Cut the cherry tomatoes into quarters and add to the bowl along with the diced bell pepper and chopped spinach.
