Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
Remove the skins from the sausages and put the sausage meat in a large mixing bowl.
Add finely chopped onion, breadcrumbs, thyme, aniseed, salt, and black pepper to the bowl with the sausage meat. Thoroughly mix using your hands or a spoon until well combined.
Unroll the puff pastry sheets on a clean surface. If using frozen pastry, ensure it is fully thawed before unrolling.
Cut each pastry sheet into two equal rectangles lengthwise, resulting in four long strips from the two sheets.
Take a portion of the sausage mixture and form it into a log along the long edge of each pastry strip.
Brush the opposite edge of each pastry strip with the beaten egg to help seal the roll.
Starting from the sausage edge, carefully roll the pastry to enclose the sausage meat, sealing the edge well.
Cut each long sausage roll into six equal pieces to make mini sausage rolls.
Place the mini sausage rolls seam-side down on the prepared baking sheet.
Brush the top of each roll with the remaining beaten egg for a glossy finish.
Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed, and the sausage meat is cooked through.
Allow the mini sausage rolls to cool slightly before serving. Enjoy them warm or at room temperature.
