Preheat your oven to 375Β°F (190Β°C).
If not using premade mini pie crusts, grease a 12-cup muffin tin with olive oil or non-stick spray.
In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
Stir in the shredded cheese, diced bacon or ham, and chopped spinach. Mix until evenly distributed.
If using mini pie crusts or phyllo pastry cups, place them into the muffin tin. If not, you can pour the mixture directly into the greased muffin tin.
