Preheat your oven to 180°C (350°F). Line a 9-inch square baking tin with parchment paper, leaving some overhang for easy removal.
To make the shortbread, combine 250g of all-purpose flour and 75g of caster sugar in a large bowl. Add 175g of unsalted butter, cut into small cubes.
