📝 Instructions

10 steps
1

Start by preparing the vegetables: slice the red and green bell peppers, yellow onion, and zucchini into thin strips. Mince the garlic cloves.

2

Trim any excess fat from the skirt steak and cut it into thin strips, about 2-3 inches long.

3

In a small bowl, combine the chili powder, ground cumin, smoked paprika, ground coriander, salt, and black pepper to create the Mexican seasoning blend. Set aside.

4

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Once the oil is shimmering, add the steak slices in a single layer. Cook for 2-3 minutes on one side until browned, then flip and cook for another 2 minutes. Remove the steak from the skillet and set aside.

5

In the same skillet, add the remaining 2 tablespoons of olive oil. Toss in the minced garlic and cook for 30 seconds until fragrant.

6

Add the sliced onions, bell peppers, and zucchini to the skillet. Stir fry for about 5-7 minutes, or until the vegetables are tender but still crisp.

7

Return the cooked steak to the skillet and sprinkle the Mexican seasoning blend over the mixture. Toss to coat the steak and vegetables evenly with the seasoning.

8

Reduce the heat to medium and drizzle freshly squeezed lime juice over the stir fry. Stir well and let cook for an additional 2 minutes to allow the flavors to meld.

9

Remove the stir fry from heat and garnish with freshly chopped cilantro.

10

Serve hot on its own, or with warm corn tortillas for a taco-style meal. Enjoy!
