Wash and dry the red bell peppers. Cut them into small pieces, removing the seeds and stems.
Peel and finely chop the red onion.
Peel and mince the garlic cloves.
In a large saucepan, heat the olive oil over medium heat.
Add the chopped red onion and minced garlic, and sautΓ© until the onion becomes translucent, about 5 to 7 minutes.
Add the chopped red bell peppers to the saucepan and continue to cook, stirring occasionally, until they start to soften, about 10 minutes.
Pour in the red wine vinegar and honey, and stir to combine.
Season the mixture with cayenne pepper, sea salt, and freshly ground black pepper.
Bring the mixture to a gentle boil, then reduce the heat to low. Simmer uncovered, stirring occasionally, until the peppers are very soft and the liquid has reduced and thickened, about 25 to 30 minutes.
Remove the saucepan from heat and let the jam cool slightly.
Transfer the mixture to a food processor or blender and pulse until smooth, or leave it slightly chunky if desired.
Taste the jam and adjust seasoning if needed.
Transfer the red pepper jam to sterilized jars and seal tightly. Store in the refrigerator for up to two weeks.
Serve the Mediterranean Diet Red Pepper Jam with whole grain bread, grilled meats, or as an accompaniment to cheese plates.
