In a large bowl, combine 250g of whole wheat flour, 1 tsp of instant yeast, 1 tsp of sugar, and 1 tsp of salt.
Gradually add 150 ml of warm water and 2 tbsp of olive oil. Stir until a dough forms.
Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
While the dough is rising, dice 300g of chicken breast and marinate it in a mixture of 1 tbsp olive oil, 1 tbsp lemon juice, 2 minced garlic cloves, 1 tsp dried oregano, and black pepper.
Allow the chicken to marinate for at least 15 minutes.
Finely chop 1 small red onion and 1 red bell pepper. Sauté them in a pan with 1 tbsp olive oil until soft, about 5 minutes.
Add the marinated chicken to the pan and cook over medium heat until fully cooked, about 6-8 minutes. Stir in 2 tbsp of chopped fresh parsley.
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a small round.
Flatten each round slightly and fill them with a spoonful of the chicken mixture and a little crumbled feta cheese.
Pinch the edges of the dough to seal and shape them into a ball again.
Preheat the oven to 180°C (350°F). Place the filled paos onto a baking sheet lined with parchment paper.
Cover the paos and let them rest for 15 minutes.
Bake the paos in the preheated oven for 20 minutes or until golden brown.
