Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 1 large lemon, zested and juiced
  • 0.25 cup fresh parsley, chopped
  • 0.25 cup fresh dill, chopped
  • 0.25 cup fresh mint, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a medium-sized saucepan over medium heat.

Step 2

Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Add the long-grain white rice to the pan, stirring continuously for 2 minutes to lightly toast the rice.

Step 5

Pour in the vegetable broth, lemon zest, and lemon juice, mixing well.

Step 6

Increase the heat to bring the mixture to a boil, then reduce the heat to low and cover the saucepan with a lid.

Step 7

Allow the rice to cook undisturbed for 18-20 minutes, or until the rice is tender and has absorbed all the liquid.

Step 8

Remove the pan from the heat and let it sit, covered, for 5 minutes to allow the rice to steam.

Step 9

Fluff the rice with a fork and stir in the chopped parsley, dill, and mint.

Step 10

Season with salt and black pepper to taste, then serve warm.
