Elevate your lunch game with this refreshing twist on a timeless favorite: Mediterranean Diet Classic Egg Mayo. Packed with protein and bursting with vibrant flavors, this healthier interpretation combines creamy Greek yogurt in place of traditional mayo, balanced by the zest of fresh lemon juice and Dijon mustard. A sprinkle of dill, parsley, and tangy capers adds irresistible Mediterranean flair, while extra virgin olive oil melds everything into a silky, luxurious texture. Served atop crunchy slices of toasted whole grain bread, this quick and wholesome recipe is perfect for busy weekdays while keeping your health goals on track. Easy to prepare in just 20 minutes, this Mediterranean-inspired egg salad is as satisfying as it is nourishing.
Place the eggs in a saucepan and cover them with water. Bring the water to a boil over medium-high heat.
Once boiling, cover the saucepan with a lid, reduce the heat to low, and let the eggs simmer for 9-10 minutes.
While the eggs are cooking, finely chop the parsley and dill. Set them aside.
Once the eggs are cooked, remove them from the saucepan and place them in a bowl of ice water to cool for about 5 minutes.
Peel the eggs and then roughly chop them into small pieces.
In a mixing bowl, combine the Greek yogurt, extra virgin olive oil, lemon juice, Dijon mustard, and stir to blend.
Add the chopped eggs, capers, parsley, dill, salt, and black pepper to the yogurt mixture. Gently fold until all ingredients are well combined.
Toast the whole grain bread slices to your liking.
Serve the egg mayo mixture on top of the toasted whole grain bread slices.
Garnish with extra parsley or dill if desired.
