Peel the beets and onions, and slice them thinly using a mandolin or sharp knife.
In a large, nonstick skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sautΓ© for about 5 minutes until they begin to soften.
Add the sliced beets to the skillet and continue to cook, stirring occasionally, for another 10-15 minutes until the beets are tender.
