Preheat your oven to 180°C (350°F).
In a large ovenproof skillet, heat 1 tablespoon of olive oil over medium heat.
Add the minced garlic and sauté for about 1 minute until fragrant.
Add the fresh spinach and cook, stirring occasionally, until wilted, about 3 minutes.
Remove the spinach from the skillet and set aside.
In the same skillet, add the remaining olive oil and sauté the cherry tomatoes for about 2-3 minutes until they begin to soften.
Season with salt, black pepper, dried oregano, dried thyme, and red pepper flakes. Stir well to combine.
Return the spinach to the skillet and stir into the tomato mixture.
Create four wells in the spinach-tomato mixture and crack an egg into each well.
