Bring 1 cup of water and 1 tablespoon of olive oil to a boil in a medium saucepan over medium-high heat.
Stir in 1 cup of couscous, remove from heat, cover, and let it sit for 5 minutes until the water is absorbed.
Fluff the couscous with a fork and let it cool to room temperature.
Meanwhile, dice the red bell pepper and cucumber into small cubes.
Halve the cherry tomatoes and thinly slice the red onion.
Dice the feta cheese and slice the kalamata olives in half.
Chop the fresh parsley and mint leaves finely.
Juice the lemon into a small bowl and whisk in 3 tablespoons of extra virgin olive oil, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper to make a vinaigrette.
In a large mixing bowl, combine the cooled couscous, diced bell pepper, cucumber, cherry tomatoes, red onion, feta cheese, and olives.
Pour the lemon vinaigrette over the salad and toss gently to combine.
Add the chopped parsley and mint and toss again.
Taste and adjust seasoning as needed.
Refrigerate for at least 30 minutes to allow flavors to meld.
Serve chilled or at room temperature.
