Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

In a large mixing bowl, combine ground beef, finely chopped onion, minced garlic, breadcrumbs, egg, 1 teaspoon of salt, black pepper, and paprika. Mix thoroughly until everything is well incorporated.

Shape the mixture into small meatballs, approximately 1 inch in diameter. You should have about 20 meatballs. Set them aside.

In another mixing bowl, prepare the cheese pastry. Combine flour and 0.5 teaspoon of salt. Add cold, cubed butter and, using your fingertips or a pastry cutter, rub the butter into the flour until the mixture resembles coarse breadcrumbs.

Add the shredded cheddar cheese to the flour mixture and mix well.

Gradually add cold water, 1 tablespoon at a time, and mix until the dough comes together. Do not overwork the dough. Wrap the dough in plastic wrap and chill in the refrigerator for 20 minutes.

Once the dough is chilled, roll it out on a floured surface to about 3mm (1/8 inch) thick. Cut the dough into squares, approximately 7x7 cm (2.75x2.75 inches).

Place a meatball in the center of each square of pastry. Fold the pastry around the meatball, pinching the edges to seal. Place the wrapped meatballs seam-side down on the prepared baking sheet.

In a small bowl, beat 1 egg to make an egg wash. Brush the top of each pastry-wrapped meatball with the egg wash. If desired, sprinkle sesame seeds on top for garnish.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and flaky.
