Peel away the loose outer layers of the garlic heads, leaving the skins on the cloves intact. Slice off the top 1/4 inch of each garlic head to expose the tops of the cloves.
Drizzle 1 teaspoon of olive oil onto each garlic head, ensuring the cloves are well-coated. Wrap each head in aluminum foil and place on a baking sheet.
Roast the garlic heads in the preheated oven for 30-35 minutes, or until the cloves are soft and golden. Remove from the oven and let cool.
While the garlic roasts, wash and peel (optional) the Yukon Gold potatoes. Cut them into evenly sized chunks.
Place the potato chunks in a large pot and cover with cold water. Add 1 teaspoon of salt. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 15-20 minutes, or until the potatoes are fork-tender.
