Clean the octopus thoroughly under cold running water, removing the beak and any visible impurities. You can also ask your fishmonger to do this for you.

In a large pot, bring 2 liters of water to a boil and add the salt, bay leaves, and one garlic clove (crushed).

Once the water is boiling, reduce it to a simmer and add the cleaned octopus. Cover and cook for 45-60 minutes, or until the octopus is tender and easily pierced with a fork.
