Rinse the dried navy beans and place them in a large bowl. Cover them with water and let them soak overnight, or for at least 8 hours.

Drain and rinse the soaked beans. Add them to a large pot with 6 cups of fresh water. Bring to a boil, reduce heat to low, and simmer for 45 minutes until the beans are tender but not falling apart. Drain and set aside.

Preheat your oven to 325°F (165°C).

In a large oven-safe pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.

In the same pot, sauté the chopped onion in the bacon fat until softened and translucent, about 5 minutes. Add the minced garlic and cook for another minute.

Add the cooked beans and reserved bacon to the pot, stirring to ensure the beans are evenly coated in the sauce.

Cover the pot with a lid or aluminum foil and transfer to the preheated oven. Bake for 2 hours, stirring occasionally.

After 2 hours, remove the lid and bake for an additional 30-45 minutes to allow the sauce to thicken.
