Peel the green plantains by cutting off both ends and making a shallow vertical slit along the curve of each plantain. Slide your fingers under the skin to peel it off.
Cut the plantains into 1-inch thick slices.
In a large pot, bring the 6 cups of water to a boil. Add the 2 teaspoons of salt.
Add the plantain slices to the boiling water and cook for about 20-25 minutes, or until they are fork-tender.
While the plantains are cooking, thinly slice the red onion.
In a small frying pan, heat the 2 tablespoons of vegetable oil over medium heat.
Add the sliced onions, 2 tablespoons of vinegar, and 0.5 teaspoons of ground black pepper to the pan. Sauté for 5-7 minutes, or until the onions are soft and slightly translucent. Set aside.
Once the plantains are cooked, reserve 1 cup of the boiling water, then drain the plantains.
Place the drained plantains in a large mixing bowl. Add the reserved boiling water a little at a time while mashing with a fork or potato masher until reaching a smooth consistency.
Mix in the 2 tablespoons of butter and continue mashing until the butter is fully incorporated.
Serve the mangu hot, topped with the sautéed onions.
