Ingredients

  • 2 pounds Russet potatoes
  • 1.5 cups All-purpose flour
  • 1 large Egg
  • 1 teaspoon Salt
  • 2 tablespoons Olive oil
  • 2 medium Garlic cloves
  • 28 ounces Crushed tomatoes
  • 10 leaves Fresh basil leaves
  • 0.5 cups Parmesan cheese
  • 0.5 teaspoons Black pepper

Directions

Step 1

Peel and boil the potatoes in a pot of salted water until fork-tender, about 20-25 minutes.

Step 2

Drain the potatoes and allow them to cool slightly. Use a potato ricer or mash them until smooth.

Step 3

On a clean work surface, mound the mashed potatoes and sprinkle with the salt. Make a well in the center and crack the egg into the well.

Step 4

Gradually incorporate the egg into the potatoes using your hands or a fork. Sprinkle the flour over the mixture and gently knead until a soft dough forms. Avoid over-kneading.

Step 5

Divide the dough into 4 portions. Roll each portion into a long rope about 3/4 inch thick. Cut the ropes into 1-inch pieces.

Step 6

To shape the gnocchi, gently roll each piece over the tines of a fork to create ridges, if desired.

Step 7

Bring a large pot of salted water to a boil and cook the gnocchi in batches. They are done when they float to the surface, about 1-2 minutes. Remove them with a slotted spoon and set aside.

Step 8

For the sauce, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Step 9

Pour in the crushed tomatoes and season with salt and black pepper. Simmer the sauce for 15 minutes, stirring occasionally.

Step 10

Stir in the fresh basil leaves and simmer for another 5 minutes.

Step 11

Add the cooked gnocchi to the skillet with the sauce and gently toss to coat.

Step 12

Serve warm, topped with freshly grated Parmesan cheese.
