Treat yourself to a healthier twist on a beloved South Indian classic with this Low Sodium Jigarthanda recipe! Perfect for those seeking a refreshing yet guilt-free indulgence, this flavorful drink combines creamy almond milk, luscious vanilla ice cream, and the delicate sweetness of rose syrup with nutrient-rich chopped nuts. The recipe cleverly replaces traditional high-sodium ingredients with unsweetened almond milk and low sodium ice cream, while retaining the authentic cooling charm of Jigarthanda through silky cubes of agar agar. Prepared in under 40 minutes, this wholesome beverage is ideal for summer gatherings or as a midday pick-me-up. Serve it chilled in tall glasses for a visually stunning treat thatβs as nutritious as it is delicious.
In a saucepan, add milk and bring to a simmer over medium heat.
While the milk is heating, dissolve cornflour in a small amount of cold water to make a smooth paste.
Add the cornflour paste to the simmering milk and stir continuously to avoid lumps.
Continue simmering until the mixture thickens slightly, about 5 minutes.
Add sugar and vanilla extract to the thickened milk mixture and continue to stir until all sugar dissolves. Turn off the heat and let it cool.
In another small saucepan, add water and bring to a boil. Add the china grass/agar agar and stir until completely dissolved. This will take around 5 minutes.
Pour the agar agar solution into a flat dish and let it set completely at room temperature. Once set, cut it into small cubes.
To serve, take a tall glass and add a tablespoon of rose syrup at the bottom.
Add a few cubes of set china grass, followed by some chopped nuts.
Add a scoop of the thickened milk mixture and gently pour chilled almond milk on top.
Finish with a scoop of low sodium vanilla ice cream and garnish with more chopped nuts, if desired.
Serve immediately and enjoy this soothing and refreshing beverage.
