Ready in just 20 minutes, these low sodium goat cheese sandwiches are ideal for a quick, wholesome snack or a crowd-pleasing starter. Serve warm and embrace the delightful fusion of crunch and melt-in-your-mouth goodness.
Preheat your grill or grill pan to medium-high heat.
In a small mixing bowl, combine the soft goat cheese with chopped basil leaves, fresh thyme, and ground black pepper. Stir until well mixed.
Spread a thin layer of unsalted butter on one side of each slice of whole grain bread.
On the non-buttered side of two slices, evenly distribute the goat cheese mixture.
Peel and halve the garlic clove and gently rub the cut side over the buttered side of the remaining two slices of bread. Place these slices, garlic side down, over the goat cheese-topped slices to form sandwiches.
Brush a little olive oil on the outside of each sandwich to prevent sticking.
Place the sandwiches on the preheated grill or grill pan and allow to cook for about 3-5 minutes on each side or until the bread is golden brown and the cheese is melted.
Remove from the grill and let the toasts cool slightly. Cut each into halves or quarters, if desired, and serve warm.
