Preheat your grill to medium-high heat.
Peel and thinly slice the onion.
Core and slice the red and green bell peppers into strips about 1/2 inch wide.
In a large bowl, toss the onion and bell pepper strips with the olive oil, freshly ground black pepper, and garlic powder.
Place a grill basket on the preheated grill and add the pepper and onion mix. Grill for about 10-12 minutes, stirring occasionally, until the vegetables are slightly charred and tender.
While the vegetables are grilling, place the low-sodium sausages on the grill. Cook them for about 8-10 minutes, turning frequently to ensure even cooking and nice grill marks.
As the sausages are almost done, slice the hot dog buns open, if not pre-sliced. Lightly toast them on the grill for about 1-2 minutes, or until they have a light golden color.
Remove the grilled sausages, vegetables, and buns from the grill.
Place each sausage in a bun and spoon some of the grilled onion and pepper mixture on top.
Drizzle each with 1 teaspoon of yellow mustard and sprinkle with fresh parsley before serving.
