Deseed and finely chop the red bell pepper. Slice the green onions thinly. Set aside.
In a large non-stick pan, heat the olive oil over medium heat.
Add the red bell pepper and sautΓ© for about 3 minutes or until they start to soften.
Stir in the green onions and baby spinach leaves, and cook for another 2 minutes, or until the spinach wilts.
Sprinkle the non-sodium taco seasoning over the vegetables and mix well. Remove the vegetables from the pan and set them aside in a bowl.
Place one tortilla in the same pan over medium heat. Scatter 1/4 cup of shredded low-sodium cheddar cheese evenly on one half of the tortilla.
Add a quarter of the vegetable mixture on top of the cheese.
Fold the other half of the tortilla over the cheese and vegetables to form a semi-circle.
Press gently with a spatula and cook for about 2-3 minutes on each side, or until the cheese is melted, and the tortilla is golden brown.
Repeat the cheese, vegetable, and cooking process with the remaining tortillas.
Cut each tortilla into three wedges and serve warm.
