Indulge in the festive flavors of traditional Dutch speculaas with this guilt-free twist: Low Fat Speculaas! Made with unsweetened applesauce instead of butter, this recipe delivers all the signature warmth of speculaas spices—think cinnamon, nutmeg, clove, and ginger—while keeping the fat content to a minimum. These light and crispy cookies are incredibly easy to make, requiring just 15 minutes of prep time and a short bake. Perfect for the holidays or an everyday treat, they’re beautifully finished with a decorative almond on top. Whether you’re watching your waistline or simply craving a spiced snack, these low-fat cookies are a wholesome, flavorful delight!
Preheat your oven to 175°C (350°F). Line two baking sheets with parchment paper.
In a large mixing bowl, combine the all-purpose flour, brown sugar, speculaas spice mix, baking powder, and salt. Mix well to evenly distribute the dry ingredients.
In a separate bowl, whisk together the unsweetened applesauce, skim milk, and vanilla extract until smooth.
Gradually add the wet ingredients into the dry ingredients. Stir together with a wooden spoon or spatula until a cohesive dough forms. If the dough is too dry, add a teaspoon of skim milk at a time until it just comes together.
Place the dough between two sheets of parchment paper. Roll it out to about 5 mm (1/4 inch) thickness.
Use cookie cutters to cut out your desired shapes and arrange the cookies on the prepared baking sheets, leaving a little space between each cookie. If using almonds, press one almond gently into the top of each cookie for decoration.
Bake in the preheated oven for 10-12 minutes, or until the edges are just starting to brown.
Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Store the cooled cookies in an airtight container for up to one week. Enjoy your light and flavorful low-fat speculaas cookies!
