In a large mixing bowl, combine the whole wheat flour and all-purpose flour.
Dissolve the active dry yeast in 300 ml of warm water. Ensure the water is not too hot, around 40°C (104°F) is ideal.
Add the honey and salt to the yeast mixture, then stir until everything is well dissolved.
Make a well in the center of the flour mixture and pour in the yeast mixture.
Add the olive oil and 30 grams of sesame seeds to the bowl.
