Boil 1 liter of low-fat milk in a heavy-bottomed pan. Stir occasionally to prevent sticking.

As the milk comes to a boil, add lemon juice to curdle it. Mix well until the milk solids separate from the whey.

Once curdled, strain through a muslin cloth. Rinse the solids with cold water to remove lemon flavor. Squeeze out excess water and hang the muslin for 30 minutes to drain completely.

Mash the paneer (curdled milk solids) until smooth. Add cornflour and mix until it forms a dough.

Divide into small portions and shape each into smooth balls, flattening slightly.

Boil 500 ml of water in a wide pan. Add 50 grams of sugar and mix until dissolved.

Add paneer balls into the boiling sugar water. Cover and cook for 15 minutes until they puff up. Turn off the heat and let them cool.

In another pan, heat the remaining 1 liter of low-fat milk. Boil until it reduces to 750 ml.

Add 50 grams of sugar, cardamom powder, and saffron strands to the milk. Mix well and simmer for 5 minutes.

Gently squeeze the paneer discs to remove excess water and add them to the milk mixture.

Allow the Ras Malai to simmer for another 5 minutes.

Cool to room temperature, then refrigerate for at least 2 hours.
