Preheat your oven to 350Β°F (175Β°C).
In a medium bowl, whisk together the egg yolks and egg whites until well combined and slightly frothy.
Add the coconut milk, unsweetened shredded coconut, sugar substitute, vanilla extract, and cornstarch to the egg mixture.
Mix all the ingredients thoroughly to form a smooth batter without any lumps.
Lightly grease the inside of 8 muffin tins or ramekins with butter-flavored cooking spray.
Pour the mixture evenly into the prepared tins or ramekins.
Place the tins or ramekins into a larger baking dish, filling the dish with the 500 ml of water to create a water bath. The water should reach halfway up the sides of the tins or ramekins.
