Dry roast the raw peanuts in a non-stick pan over medium heat for about 5-7 minutes until they become golden and aromatic. Keep stirring to avoid burning. Once done, remove from heat and allow them to cool.

Once the peanuts are cool, rub them between your palms to remove their skins. You can also use store-bought roasted peanuts and skip this step if desired.

In another pot, add jaggery and water, and cook over low heat. Stir continuously until the jaggery melts and begins to bubble.

Check the consistency of the jaggery syrup. To do this, drop a small bit of syrup into a bowl of water. It should form a firm ball. If not, continue cooking and testing until the right stage is reached.

Once the jaggery syrup is ready, add cardamom powder and roasted peanuts. Mix quickly and thoroughly so that all peanuts are coated well with the syrup.

Immediately transfer the mixture onto a greased surface or onto a greased parchment paper. Quickly roll it out using a greased rolling pin to about 1/4 inch thick.

Let the chikki cool for a few minutes but not completely harden. Cut into desired shapes using a knife while still warm.
