In a large mixing bowl, combine the whole wheat flour, instant yeast, sugar, and salt. Mix well to ensure the dry ingredients are evenly distributed.
Make a well in the center of the dry ingredients and add warm water and olive oil. Mix the ingredients together until a soft dough begins to form.
Knead the dough on a lightly floured surface for about 8-10 minutes until it becomes smooth and elastic. If the dough is sticky, add a little more flour, one tablespoon at a time.
Place the dough in a lightly oiled bowl, cover it with a damp cloth, and allow it to rise in a warm place for about 45 minutes or until it doubles in size.
Preheat your oven to 220Β°C (428Β°F) and line a baking sheet with parchment paper.
Once the dough has risen, punch it down to release the air. Divide the dough into 4 equal portions and roll each portion into a small ball.
On a floured surface, roll out each dough ball into a circle approximately 1/4 inch thick.
Place the rolled-out dough onto the prepared baking sheet. In a small bowl, mix the za'atar spice blend with low fat yogurt to create a paste.
Spread a thin layer of the za'atar yogurt mixture evenly over the surface of each dough circle.
Bake the manakish in the preheated oven for about 8-10 minutes or until the bread is golden brown and the topping is aromatic.
Remove from the oven and let them cool slightly on a wire rack. Serve warm or at room temperature.
