Indulge in the rich yet surprisingly light flavors of this Low Fat Luxurious Bone Marrow Sauce, a gourmet delight reimagined for a healthier profile. This recipe masterfully balances decadence and nutrition by using roasted beef marrow bones as the base, paired with low-sodium chicken broth and an aromatic blend of fresh vegetables, herbs, and red wine. Slow-simmered to perfection, the sauce is expertly strained for a velvety consistency, making it an irresistible accompaniment to roasted meats or hearty vegetables. With minimal added fat and a focus on robust, natural flavors, this sauce delivers all the richness of traditional bone marrow sauces without the guilt. Perfect for elevating any meal, this dish proves that indulgence can be both elegant and wholesome.
Preheat your oven to 450°F (230°C).
Place the beef marrow bones on a baking sheet and roast in the oven for 20 minutes until they are nicely browned.
While the bones are roasting, finely chop the onion, carrot, and celery. Mince the garlic cloves.
Once the bones are roasted, transfer them to a large pot. Drain off any excess fat.
In the same pot, add the olive oil over medium heat. Add the chopped onion, carrot, celery, and garlic. Cook until the vegetables are softened, about 5-7 minutes.
Stir in the tomato paste and cook for another 2 minutes until it darkens slightly.
Deglaze the pot with red wine, scraping up any bits stuck to the bottom. Let it reduce by half.
Add the roasted bones, chicken broth, thyme sprigs, bay leaf, black peppercorns, and salt to the pot. Bring to a gentle boil, then lower heat to a simmer.
Simmer the mixture uncovered for about 90 minutes, occasionally skimming any foam or fat from the surface.
Remove the bones from the pot and discard them. Strain the sauce through a fine-mesh strainer into another pot, discarding the solids.
Continue simmering the strained sauce to reduce further if a thicker consistency is desired.
Taste and adjust seasoning with additional salt, if needed.
Stir in freshly chopped parsley before serving.
Serve warm over meat or roasted vegetables for a luxurious finish.
