📝 Instructions

8 steps
1

Preheat your oven to 200°C (392°F).

2

To make the litti dough, in a mixing bowl combine whole wheat flour, carom seeds, and 1/2 teaspoon salt. Gradually add water and knead into a smooth and firm dough. Cover with a damp cloth and set aside.

3

For the stuffing, mix sattu, chopped onion, grated ginger, chopped green chili, 1/2 teaspoon salt, 1 teaspoon mustard oil, lemon juice, and cumin seeds in a bowl. Adjust seasoning and set aside.

4

Divide the dough into 8 equal portions. Roll each portion into a ball and flatten slightly. Place 1 tablespoon of the sattu stuffing in the center of each disc and pinch the edges to seal. Roll gently to form smooth balls.

5

Arrange the littis on a baking sheet and bake in the preheated oven for about 30 minutes or until golden brown, turning them halfway through.

6

While the littis are baking, prepare the chokha. Roast the brinjals and tomatoes over an open flame or under a broiler until the skin is charred and the flesh is soft.

7

Once roasted, peel the charred skin and mash the flesh in a bowl. Add grated garlic, chopped cilantro, 1/2 teaspoon salt, red chili powder, and the remaining mustard oil. Mix well.

8

Serve the hot littis with the freshly made chokha on the side.
