Indulge in the delicate charm of our *Low Fat Classic Financier*, a guilt-free twist on the beloved French almond cake. This recipe preserves the signature nutty aroma of traditional financiers, thanks to golden browned butter (beurre noisette), while keeping things lighter with the use of fluffy egg whites and minimal fat. A harmonious blend of ground almonds, a hint of vanilla, and a touch of baking powder creates a moist and tender crumb thatβs irresistibly airy. Ready in just 30 minutes, these bite-sized delights are perfect for tea time, desserts, or an elegant snack to impress your guests. With simple ingredients and easy instructions, this low-fat financier is proof that less can truly be moreβwithout sacrificing flavor.
Preheat your oven to 375Β°F (190Β°C). Grease a small muffin or financier mold pan with a little butter or cooking spray to prevent sticking.
In a small saucepan over medium heat, melt the butter until it becomes golden brown and emits a nutty aroma. This is known as beurre noisette or brown butter. Once achieved, remove it from the heat and allow it to cool slightly.
In a mixing bowl, whisk together the sugar, ground almonds, flour, baking powder, and salt until well combined.
In a separate clean bowl, lightly whisk the egg whites until they are foamy but not stiff. You do not need to beat them to peaks, just enough to break the structure.
Add the egg whites to the dry ingredients, followed by the vanilla extract, and gently fold the mixture until the ingredients are just combined.
Pour the cooled browned butter into the mixture and gently fold it in until you achieve a smooth batter.
Fill each mold in your prepared pan to about 3/4 full with the batter to allow space for rising during baking.
Place the pan into the preheated oven and bake for around 15 minutes, or until the financiers become golden on top and a toothpick inserted into the center comes out clean.
Remove the pan from the oven and allow the financiers to cool in the pan for 5 minutes. Then, transfer them to a wire rack to cool completely. Enjoy your low-fat financiers on their own or with a cup of tea!
