Shred the cooked chicken breast into fine pieces and place into a medium-sized mixing bowl.
Dice the avocado and mash it lightly with a fork in another bowl. Mix the avocado with lime juice, cilantro, ground cumin, garlic powder, salt, and pepper until combined to make a light guacamole.
Lay out the whole wheat tortillas. On one half of each tortilla, spread about 1/4 cup of the prepared chicken, 2 tablespoons of guacamole, and 2 tablespoons of shredded low-fat cheese. Fold the tortillas in half over the filling to form a semicircle.
Heat a non-stick skillet over medium heat and spray lightly with olive oil cooking spray.
Place one filled tortilla in the skillet and cook for about 2-3 minutes, until the bottom is golden brown and crispy. Flip the tortilla carefully and cook for another 2-3 minutes until the other side is golden brown and the cheese is melted. Repeat with remaining tortillas.
Cut each quesadilla into 2-3 wedges and serve immediately. Enjoy with a side of salsa or a dollop of plain Greek yogurt, if desired.
