Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
Finely dice the onion and garlic. Grate the carrot and chop the parsley.
Heat the olive oil in a skillet over medium heat. Add the onion and garlic, sauté until the onion is translucent, about 3-4 minutes.
