Peel and dice the potatoes into small cubes, approximately 1-inch in size. Finely chop the onion and tomato. Slit the green chili lengthwise and finely chop the ginger.
Heat 1 teaspoon of mustard oil in a non-stick pan over medium heat. Once hot, add cumin seeds and let them crackle.
Add the chopped onions and sautΓ© for about 3-4 minutes until they turn translucent.
Add the chopped ginger and green chili, sautΓ© for another minute until the raw smell of ginger disappears.
