Steam the cauliflower florets until tender, then mash them into a smooth, lump-free mixture.
In a bowl, combine the mashed cauliflower, 1 tablespoon of almond flour, turmeric powder, red chili powder, ginger-garlic paste, and salt. Mix well to form a uniform dough for the filling.
Heat 1 tablespoon of ghee in a pan. Add mustard seeds and curry leaves, allowing them to crackle. Add the spiced cauliflower mixture and sautΓ© for 2-3 minutes. Remove from heat and let it cool.
