Delightfully creamy and irresistibly refreshing, this Low Carb Taro Milk Tea is a guilt-free twist on the classic bubble tea favorite. Perfect for keto or low-carb diets, this recipe uses taro root for its distinctive nutty sweetness, blended with unsweetened almond milk and rich coconut milk to create a velvety drink without the sugar overload. Sweetened naturally with erythritol or monk fruit, and infused with bold black tea, this beverage is a harmonious balance of earthy and aromatic flavors. For an extra indulgent touch, you can thicken it with xanthan gum and serve it over ice for an invigorating pick-me-up. Ready in just 25 minutes, this taro milk tea is as nourishing as it is satisfying, making it an ideal treat for tea lovers craving a healthier option!
In a small pot, add the peeled and cubed taro root. Cover with water and bring to a boil over medium-high heat.
Cook the taro for 10-12 minutes, or until soft and fork-tender. Drain and let it cool slightly.
In a blender, combine the cooked taro root, unsweetened almond milk, coconut milk, erythritol or monk fruit sweetener, and vanilla extract. Blend until smooth and creamy. Set aside.
In a separate heatproof cup, steep the black tea bags in 1 cup of boiling water for 5 minutes. Remove the tea bags and let the tea cool to room temperature.
Combine the taro mixture and cooled black tea in a blender. Blend again until fully incorporated. If you prefer a thicker consistency, add xanthan gum and blend for an additional 15-20 seconds.
Fill two glasses with ice cubes, and pour the taro milk tea over the ice. Stir gently.
Serve immediately and enjoy!
